Vegan Cashew Macadamia Chipotle Creamy Cheese

This is a delicious, quick and easy replacement for cheese! Healthy and perfect spread or dip. When my hubby asked for cheese on his Ono tacos, I said sure! Knowing I could come up with a dairy free option we both could enjoy this recipe came to me as if by the Taco King himself ha ha!

Adapted from an idea a friend gave me the other day for a vegan aioli I added a few ingredients and cut back on the water and there you have it! The birth of this yummy recipe, just in time for taco night!


1/4 cup raw cashews ( I soaked mine in water for 2 hours first )

1/4 cup macadamia nuts

2 cloves of garlic

1 whole (sauce) chipotle pepper

1/4 cup of water

2 Tablespoons avocado oil

1 Tablespoon Dijon mustard

2 Tablespoons nutritional yeast

Salt and Pepper to taste

Directions: Blend all ingredients until smooth and creamy. Keep refrigerated. Dip Oven baked fries, shmear on bagels, toast, tacos, dip veggies ...just Go crazy!
