Skinny Pumpkin Spice Latte


Happy first day of Autumn!

This is a wonderful season, full of warm colors, cozy flannels, crisp mornings and spicy flavors!

This is also the time of year that restaurants and coffee shops change their menu, eliminating the summer spritzers and stone fruits and instead offering rich flavored foods and drinks with heart warming ingredients like vanilla, cinnamon and nutmeg. Enter the classic staple "PUMPKIN SPICE LATTE" . This tasty drink sounds simple enough and well heck pumpkin is healthy right? Unfortunately the majority of PLS's out there are full of unnecessary sugar and most do not even contain a trace of real pumpkin! Hence the need for this "cleaned up" skinny version. I have chosen to utilize hemp and coconut milk for a creamy delicious base and added lots of "fallish" spices as well as organic pumpkin puree to make this a satisfying fall treat!

SKINNY PUMPKIN SPICE LATTE

15 oz organic pumpkin puree

2 cups unsweetened coconut milk

4 cups unsweetened hemp milk

1 tsp vanilla

1 tsp cinnamon

1/8 tsp nutmeg

1/8 tsp clove

4 tsp stevia

Optional, Garnish with whipped coconut cream

Combine ingredients in a sauce pan and simmer on low for 5 minutes.

Meanwhile, brew a strong pot of coffee or individual shots of espresso.

Fill coffee mug 1/4 full with coffee or espresso, top with Pumpkin Spice mix, optional to top with fresh whipped coconut cream. Refrigerate remaining mix in a sealed jar for up to a week or share with friends!
